One may get surprised to see eggs being refrigerated in the US and Canada, a practice nonexistent in other parts of the world. The reason is very easy to understand. For hygienic purpose, the eggs are washed in the US and Canada and while washing, the eggs lose their protective covering on their shell. The eggs are then more susceptible to bacterial attack. The FDA has, therefore, prescribed that all eggs must be refrigerated before they are sold.
